An amazing recipe for a healthier alternative to cake – with the same satisfaction!
Ingredients:
*Makes one loaf of bread
- 1/3 cup of olive oil
- 1/2 cup honey
- 1/2 cup Greek yoghurt
- 1 egg
- 1 1/2 cups whole wheat flour
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup of zucchini shredded small (no need to peel it)
- Optional toppings such as chocolate chips or nuts (I didn’t use any)
How to Make it:
- Whisk the oil, honey, egg, yoghurt and vanilla together in one bowl
- In another bowl mix the baking soda, flour, salt and cinnamon together
- Pour the bowl with wet ingredients into the bowl with dry ingredients and mix together
- Slowly add the zuchhinni while stirring and optional toppings. Be sure not to over-mix
- Spread the batter into a greased loaf pan and set oven to 350 degrees farenheit
- Bake for 40 minutes or until golden
