How to Make Zucchini Bread: A Healthier Alternative

An amazing recipe for a healthier alternative to cake – with the same satisfaction!

Ingredients:

*Makes one loaf of bread

  • 1/3 cup of olive oil
  • 1/2 cup honey
  • 1/2 cup Greek yoghurt
  • 1 egg
  • 1 1/2 cups whole wheat flour
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup of zucchini shredded small (no need to peel it)
  • Optional toppings such as chocolate chips or nuts (I didn’t use any)

How to Make it:

  1. Whisk the oil, honey, egg, yoghurt and vanilla together in one bowl
  2. In another bowl mix the baking soda, flour, salt and cinnamon together
  3. Pour the bowl with wet ingredients into the bowl with dry ingredients and mix together
  4. Slowly add the zuchhinni while stirring and optional toppings. Be sure not to over-mix
  5. Spread the batter into a greased loaf pan and set oven to 350 degrees farenheit
  6. Bake for 40 minutes or until golden
